This easy shredded chicken is perfect for making dinner on busy nights. It’s simple to prep, full of flavor, and can be used in so many ways like tacos, casseroles, salads. this recipe uses the slow cooker, but you can also do it on the stove top to cut down on the cooking time.
Ways to Use Shredded Chicken
- This recipe is great for meal prepping. You can make a double batch and keep it in the fridge all week. We like to add sauces or seasoning to change up the flavor. It’s also great to use for tacos, salads, and casseroles.
- Swap out shredded chicken any recipe that calls for chicken. My family especially loves it in pasta and it makes it much easier to add a little protein to my kid’s meals. They may turn their nose up at cut up chicken pieces on their plate, but they rarely complain when we mix in some shredded chicken. It soaks up the flavor of the sauce blends right in with their noodles.
- You can portion it out and freeze it so you always have chicken on hand. We use freezer bags or small containers and keep it in our freezer for up to 3 months.
How to Shred the Chicken
- Use a hand mixer. This is my favorite way because I don’t have to get out many kitchen supplies and it is super quick and easy. You can put the chicken in a large bowl and use the standard attachments to mix the chicken until it’s shredded the way you like it. You can also use a stand mixer on the medium low setting.
- Shred by hand. You can simply use your hands (we love to use these gloves when prepping/handling our meat) or two forks to easily shred the chicken. It makes the pieces a little larger than with the hand mixer but doesn’t take a lot of time since this cooking method makes the chicken super tender.
- You can also use a food processor, but be sure to use the dough blade attachment to avoid making the chicken too mushy. Cut the cooked chicken into smaller pieces and process for 20-30 seconds until it’s all shredded about the same size.
